Adobong Lamb (Other Meats)

2 pounds lamb shoulder chops or shank
5-6 cloves garlic crushed
1/2 cup vinegar
3 Tbsp soy sauce
1 bay leaf
1 tsp whole or crushed peppercorns
1 cup water
Place the lamb in a large pot so that the lamb is in a single layer. Add all other ingredients and bring to a boil. Turn heat to low and simmer for 2 hours until meat is tender.

Remove meat from pot. Reserve 1 cup of sauce. Boil remaining sauce and reduce until oil starts to appear. Pan fry the lamb pieces for about 2 minutes per side. Pour off excess oil from frying the lamb, add reserved sauce and reheat in frying pan. Serve hot.
