Nilagang Manok - Boiled Chicken Stew ( Soup )
Ingredients:
1 whole chicken, cut into serving pieces
5 - 6 cups water
1" thick ginger, cut into rounds
1/2 tsp peppercorns, crushed
2 tsp salt
1 large onion, quartered
2 celery stalks, cut into 2-inch lengths
4 medium potatoes, quartered
1/2 cup scallion cut into 2-inch lengths
3 carrots, cut into bite sizes
Cabbage or Napa cabbage, cut into bite sizes

Fish sauce (patis) - optional

Instructions:
In a large saucepan, combine chicken pieces, water, ginger, peppercorns, salt, onion and celery. Bring to a boil. Lower heat, cover and simmer until chicken is tender. Add potatoes and carrots. Simmer until tender. Add cabbage and green onions and cook until soft. Serve hot. Season with additional salt or fish sauce to desired taste.
